Manhattan with Fig Foam

Manhattan cocktail garnished with a cherry and lemon

I just had this at Péché It is worth the effort.

Ingredients …

2 oz. rye
1 oz. sweet vermouth
2 dashes of bitters or to taste
Fig Foam, see below.
Maraschino cherry as garnish

The Mixing …

Combine first 3 ingredients in the bottom of a mixing glass. Fill with ice and stir 15–20 seconds to chill. Strain into chilled cocktail glass and garnish. From a CO2 siphon, dispense approximately ¼–½-inch fig foam onto top of drink.

The Foam …

¾ c. fresh figs, pureed
¾ c. sugar
¾ c. water
2 egg whites, well beaten

Bring figs, water, and sugar just to boil, cool. When cooled, run through a cheese cloth. You will be left with about 12 ounces of syrup. Fold egg whites into syrup and funnel mixture into chilled CO2 siphon. Cap and charge Siphon with C02, then shake vigorously.
